Vita E Bella Sourdough Focaccia

Fluffy, golden focaccia with a crispy olive oil bottom & herby, fragrant bite. Made with organic Vita E Bella from @kanelspices - pure spice, no fillers. Canadian-made & flavour-packed!

Bread flour 394g
AP flour 79g
Semolina 52g
Water 1 378g
Water 2 52g
Salt 10g
Vita e Bella 16g
Olive oil 12g
Levain (12hr @ ~70°F) 157g

Method:
1. Mix Water 1, levain & all flours.
2. Rest 30 mins, covered.
3. Add salt + Water 2, mix until absorbed.
4. Mix in Vita e Bella.
5. Add oil, folding it in with wet hands.
6. Bulk ferment: 2 hrs with 2-3 folds.
7. With a wet hand, scoop under the dough, stretch it up & fold over. Repeat from all sides.
8. Cold proof overnight in fridge, covered.
9. Oil pan, gently stretch dough into it.
10. Proof for 3-4 hrs.
11. Bake: 30 mins @ 450°F (232°C).
