French Onion Grilled Cheese Sandwich

INGREDIENTS

3 Tbsp Glasses & Grapes Fresh or Roasted Garlic EVOO
1 tablespoon fresh parsley, minced
Sea salt & black pepper to taste
Salt Spring Kitchen Onion & Thyme Savoury Spread
2 ounces Gruyère cheese, grated
2 ounces Mozzarella cheese, grated
4 slices bread, cut ½ inch thick

DIRECTIONS
Brush one side of each slice of bread with olive oil.
Add 4 tablespoons of Onion & Thyme spread to the shredded cheese and stir to combine.
Put down two slices of bread, and scoop half of the cheese-onion mixture onto each one. Top with the remaining slices of bread and press down gently.
Heat the skillet over medium heat and add the sandwiches.
Cook until the bottoms turn golden brown, 3 to 4 minutes, reducing the heat to prevent toast from darkening too quickly if needed.
Flip the sandwiches, brush with the remaining EVOO and press down and cook until the cheese has fully melted and the bottoms turn golden brown, 3 to 4 minutes.
Serve immediately with extra Onior & Thyme spread on the side.
