Halloumi and Vegetable Skewers
This sensational yet simple vegetarian recipe is a keeper. Thread a rainbow of red onions, zucchini, yellow squash, red peppers and cheese on full size skewers for a delicious main, or mini skewers for an impressive appetizer or side.
INGREDIENTS
1/4 cup Glasses & Grapes Roasted Garlic EVOO
2 tablespoons fresh lemon juice, plus 1 additional lemon cut into wedges for serving
2 tablespoons Glasses & Grapes Aceti Red Wine Vinegar
2 Tsp Kanel La Vita E Bella seasoning
Kosher salt and freshly ground black pepper
1 pound halloumi cheese, cut into 3/4-inch cubes
2 medium zucchini, cut into 1/2-inch rounds
Red onion, peeled and cut into 3/4-inch chunks
Red or yellow bell pepper
Tzatziki, for serving (optional)
Pita, warmed, for serving (optional)
INSTRUCTIONS
Make the marinade, whisk together EVOO, lemon juice, vinegar and Kanel La Vita E Bella seasoning in a large bowl. Season with salt and pepper to taste.
Add cheese, zucchini, onion and bell pepper (or whatever vegetables you are using), and toss to combine.
Grill skewers over direct heat until cheese browns and zucchini has slightly softened with grill marks, 3-5 minutes per side. Remove skewers from the grill to a serving platter. Squeeze lemon wedges over skewers and serve immediately with tzatziki and warm pita.
