Sun-dried Tomato Pesto

Sun-Dried Tomato Pesto (known as “Pesto Rosso”) is a vibrantly-colored, deeply-flavoured Sicilian condiment with almonds, garlic, herbs, and olive oil. Serve this hearty, unique sauce with pasta, your favourite meats and fish, on a toasted baguette or as a delicious sandwich spread.

Add oil-packed sundried tomatoes, drained, with toasted slivered almonds and a handful of grated Parmesan to a food processor until finely chopped. With the motor running, slowly pour Glasses & Grapes Fresh Garlic EVOO until mixture is smooth. Season with salt and freshly cracked pepper.
