Pasta w/Grilled Asparagus & Meyer Lemon EVOO

This lemon asparagus pasta is bursting with bright spring flavours. It features crisp-tender asparagus, Parmigiano Reggiano, and our citrusy Meyer Lemon EVOO. So easy to make and perfect for a weeknight spring dinner or date night!
INGREDIENTS
1 bunch fresh asparagus
30 ml Extra Virgin Olive Oil
Pasta for four - your choice but we love fettuccini here
Meyer Lemon flavoured EVOO (for drizzling)
Parmigiano Reggiano cheese
Salt and pepper
DIRECTIONS
Preheat grill on high, direct heat.
Prepare the asparagus by breaking or cutting off any tough bottom ends.
Place the asparagus in a pan. Coat them with extra virgin olive oil and sprinkle salt over them.
Cook the pasta according to the package instructions.
Grill the asparagus for 5-10 minutes, until nicely charred and just fork tender, turning them every few minutes so that they brown relatively evenly.
When both pasta and asparagus are ready, serve in warm bowls, sprinkle with freshly shredded parmigiano and drizzle with Meyer Lemon EVOO.
Salt and pepper to taste.
