Fresh Tomato Soup with Olive Oil Drizzle
Whether it’s for a light lunch or dinner, this delicious soup will have you savouring every spoonful. Try it with our basil or roasted garlic-infused olive oil for an extra gourmet touch!
INGREDIENTS:
2 tbsp olive oil (Glasses & Grapes Basil or Roasted Garlic work really well
1 medium onion, chopped
2 garlic cloves, minced
2 lbs fresh tomatoes, roughly chopped (use ripe, in-season tomatoes for the best flavour)
1/2 cup vegetable broth (or chicken broth)
Salt and pepper to taste
Fresh basil or parsley for garnish
Additional EVOO for drizzling
INSTRUCTIONS:
In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until soft and fragrant, about 5 minutes.
Add chopped tomatoes to the pot. Simmer for 10-15 minutes until the tomatoes break down, stirring occasionally.
Remove the pot from heat and blend the soup using an immersion blender until smooth, or carefully transfer it to a blender in batches.
Return the soup to the pot. Add broth and simmer for another 5-10 minutes. Season with salt and pepper to taste.
Ladle the soup into bowls and drizzle with EVOO for a flavourful finish. Garnish with fresh herbs.
Tip: For an even richer flavour, roast the tomatoes in the oven before adding them to the pot. This enhances their sweetness and adds depth to the soup.
