Zucchini Soup

This soup is both easy to prepare and wonderfully smooth and silky. Not only is it delicious, but it also offers the added benefit of being exceptionally healthy.

INGREDIENTS

1 onion, chopped
2 tbs Glasses & Grapes Chipotle EVOO (or regular for the less adventurous)
5 cloves of garlic
2 large zucchinis (or several small ones)
1 litre homemade chicken or vegetable broth
Salt and pepper, to taste
Sprouts for garnish


DIRECTIONS

  1. In a large pan, heat some olive oil over medium heat.

  2. Add the chopped onion and minced garlic to the pan. Sauté them until the onion becomes translucent and fragrant.

  3. Add the chopped zucchini to the pan and continue to cook until the zucchini softens and develops a soft texture.

  4. Pour in the homemade chicken or vegetable broth, then let the mixture simmer over medium heat for approximately 30 minutes, allowing the flavours to meld.

  5. After the zucchini has become tender, use an immersion blender or transfer the soup to a blender in batches to puree it until smooth and creamy.

  6. Season the soup with salt and pepper to taste. If you desire a spicy kick, you can add a drizzle of our chipotle evoo at this stage.

  7. Serve the zucchini soup hot, garnished with sprouts for a fresh and crunchy element.
